Gajak Bites are a delicious winter snack made with roasted nuts and hulled sesame seeds, all bound together with jaggery syrup. This treat is perfect for snacking during the chilly weather and combines the flavors of cardamom, rose extract, and fresh rose petals for a delightful finish.
Roast nuts in a pan or oven.
Heat pan, add ghee, jaggery, and water. When jaggery melts and a smooth syrup forms, turn the heat off.
Add rose extract and cardamom powder to the syrup.
Add roasted nuts and rose petals to the mixture and mix well.
Grease a tray or place strips of parchment paper in cupcake molds.
Transfer nut mixture into cupcake molds or tray and level it using a rolling pin or spoon.
For the top layer, roast sesame seeds until they start sputtering.
Grind 3/4 part of the sesame seeds into a coarse powder, keeping the remaining 1/4 aside.
Heat ghee in a pan, add jaggery and water, and cook until a smooth, dark syrup forms.
Turn off heat and add cardamom powder, powdered sesame seeds, and whole sesame seeds to the syrup.
Mix well and layer the sesame seed mixture on top of the nuts, flattening it with a wet spoon.
Top with almonds, sesame seeds, and rose petals. Let it set.
If using a tray, cut into squares. If using cupcake molds, cut in half.
