A delightful medallion made with small potatoes and broccoli, combined with cheeses and herbs. Ideal as a side dish or a vegetarian main course, these medallions are baked to perfection and can be reshaped if needed after baking.
 Preheat the oven to 425°F.
Wash and boil potatoes until soft. Peel and smush them. Set aside.
Boil broccoli in water and salt until tender and easily smushed. Drain and set aside.
Heat oil in a pan and add onion, garlic, scallions, and cilantro. Cook until onions turn translucent.
Transfer the cooked mixture to a plate and set aside.
In a bowl, smush together the broccoli and potatoes.
Add salt, the cooked onion mixture, mozzarella, Swiss cheese, herbs, and crushed peppercorns to the bowl and mix.
Divide the mixture into equal parts and shape using a cookie cutter.
Bake for 20-25 minutes, flipping the medallions after 10 minutes.
If medallions lose shape after baking, reshape them using a cookie cutter or your fingers.
