Khichdi is a popular Indian dish known for being healthy, balanced, and easy to digest. This version is made using an Instant Pot and includes a variety of ingredients that enhance its flavor and nutritional value. It's perfect for a lazy Sunday lunch and can be paired with raita, mashed potatoes, and fried paneer.
Wash rice and lentils. Soak for 20 mins.
Start instant pot on sauté mode.
Add oil. After a minute, add bay leaf, cinnamon stick, star anise, and cumin seeds.
Once cumin seeds crackle, add crushed garlic.
After a minute, stir in onion. Sauté for 2 mins. If adding veggies, add them now and sauté for a few mins.
Add Asafoetida and stir for a few seconds.
Stir in tomatoes, cook for 2 mins, keeping stirring.
Add peas, rice, and lentil. Stir for a minute, then add 3 cups of water.
Add salt, turmeric, and Garam Masala (optional).
Secure the lid, close the pressure valve and set on pressure cook mode for 15 mins.
Release the pressure naturally. Open the lid and garnish with fresh cilantro.
