A delicious Indian flatbread stuffed with a spiced radish mixture. Grated radish is mixed with fresh coriander, ginger, and spices, then encased in a whole wheat dough, rolled out and cooked until golden brown.
Wash and peel radish and grate it. Add salt and lemon juice, then leave for a few minutes.
Squeeze out excess water from the grated radish. Set aside.
Coarsely grind fresh coriander leaves, ginger, cumin seeds, and green chillies. Mix this with the radish.
Add kasuri methi, nigella seeds, carom seeds, turmeric powder, hing, and additional salt to the mixture. Cook on a pan if there's excess moisture.
For the dough, mix whole wheat flour, oil, milk, salt, and radish water until soft and stretchy.
Divide the filling mixture and dough into equal parts. Flatten the dough, add filling, and seal.
Cook the paratha on a tava with oil, butter, or ghee until golden brown.
Serve with achar, chutney, or yogurt.
