Palak Paneer Sabudana Appe is a unique and gluten-free dish made with sabudana, spinach, and crumbled paneer, perfect for fasting or a tasty snack. It is prepared by mixing sabudana with a blend of spinach, coriander, ginger, and spices, and then shaped into small balls filled with paneer and cooked in an Appe pan. Enjoy it with green or tomato chutney for an added flavor.
In a mixer jar, add spinach, coriander leaves, ginger, green chillies, lemon juice, and salt. Grind into a smooth paste.
Add sabudana to the mixture and grind again, but do not make it a completely smooth paste.
Add roasted peanuts to the mixture and ensure they are just crushed.
Transfer the mixture into a bowl and add boiled and peeled potatoes. Mix properly and adjust salt as required.
For the paneer mixture, mix crumbled paneer, chopped green coriander leaves, crushed peppercorns, salt, and green chilies in a bowl.
Method 1: If the batter is dry enough, shape them into balls, create a well, fill with paneer mixture, and seal.
Heat the Appe pan, grease with ghee, and place the appe in it. Cover and cook on low heat for 6-7 mins, flip, cover and cook for another 6-7 mins.
Method 2: Fill appe molds half with sabudana mixture, add paneer, and then top with more sabudana mixture. Cover and cook on low heat until golden on one side. Flip and cook the other side.
Once cooked, flip a few times to ensure all sides are done, and serve with green or tomato chutney.
