A traditional dish made for Navratri, Sabudana Vada consists of soaked sabudana mixed with boiled potatoes, roasted peanuts, and spices, shaped into patties, and air-fried for a delicious treat without onion or garlic.
Soak sabudana for 4-6 hours and drain excess water.
Blend together cilantro leaves, ginger, green chilli, lime juice, salt, and 1/4 cup soaked sabudana to make a smooth paste.
In a large bowl, add mashed potatoes, 1 cup soaked sabudana, cumin seeds, and cilantro paste and mix well.
Make balls from the mixture and flatten them on your palm.
Preheat Air Fryer at 400 F for 5 minutes.
Transfer vadas to the Air Fryer basket and fry for 15-20 minutes at 400 F, flipping halfway.
Alternatively, deep fry in oil or bake at 360 F for 20-25 minutes, flipping halfway.
