Celebrate Navratri with these two delightful air fryer vegetarian recipes: Sabudana Vada made with soaked sabudana, boiled potatoes, peanuts, and spices, and crispy Haryali Paneer prepared with paneer, cilantro, spinach, and cashews.
Soak sabudana for 4-6 hours. Drain excess water and squeeze to remove any remaining water.
Blend cilantro leaves, ginger, green chilli, lime juice, and salt along with 1/4 cup soaked sabudana to make a smooth paste.
In a large bowl, combine mashed potatoes, 1 cup sabudana, cumin seeds, and cilantro paste; mix well.
Make balls from the mixture and flatten them on your palm.
Preheat the air fryer at 400°F for 5 minutes. Place vadas in the air fryer basket and cook for 15-20 minutes. Flip halfway through.
For the crispy Haryali Paneer, preheat the air fryer at 400°F for 5 minutes. Grease the basket and place paneer pieces, brushing with ghee.
Cook the paneer in the air fryer for 10-15 minutes, flipping halfway.
Alternatively, bake the paneer at 360°F for 20-25 minutes or pan-fry until golden.
