Cook red beans, sweet potato, onion, garlic, bay leaf, and salt in a pressure cooker with 1 to 1.5 cups of water for 3-4 whistles.
Drain the water ensuring no water is left. Transfer the mixture to a bowl and mash it using a potato masher or your hands.
Add spinach, coriander leaves, spices, salt, lemon juice, cooked rice, and tofu to the mashed mixture and mix well.
Start by adding 2 tablespoons of rice flour and mix well. If the mixture is sticky, add 1 tablespoon more at a time, up to 4-5 tablespoons for desired consistency.
Once the mixture is ready, divide it into 10 equal parts and shape them into patties.
Cooking options: Pan: Heat a heavy bottom pan, add oil, place the patties, cover, and cook on low to medium heat. Flip and cook uncovered until both sides are golden brown.
Oven: Preheat the oven to 400°F, place patties on a baking tray lined with parchment paper, brush with oil, and bake for 25-30 minutes until golden brown, flipping halfway.
Air fryer: Preheat the air fryer to 400°F for 5 minutes, place patties in the lined basket, and cook for 12-15 minutes until golden brown and crisp, adding a few minutes more if needed.
